The Origins of Afternoon Tea
One lump or two?

Afternoon tea is a civilised affair; it has all the sophistication of smart entertaining but in a relaxed environment - a meal of informal elegance that can be enjoyed in the cozy, relaxed environment of your sitting room or garden.
Anna, the 7th Duchess of Bedford is often credited with the invention of the tradition of afternoon tea in the early 1840's.
Traditionally dinner was not served until 8:30 or 9:00pm in the evening and the Duchess often became hungry, especially in the summer when dinner was served even later.
She ordered a small meal of bread, butter, and other niceties, such as cakes, tarts, and biscuits, to be brought secretly to her boudoir.
When she was exposed she was not ridiculed, but her habit caught on and the concept of a small meal, of niceties and perhaps tea, became popular and eventually known as "afternoon tea".
Obviously the origins of the well known British tradition of afternoon tea cannot be credited to only one woman, but evolved over a period of time, as many cultural customs do.
How to Serve an Afternoon Tea
Not only does Agatha Christie's quintessentially English detective, Miss Marple, knit and solve crimes but she also serves a traditional afternoon tea to die for! Here's how you can do the same.
Select the prettiest, most delicate, china tea service that you own.
Make sure your cutlery is gleaming bright. Set the table with a snowy white lacy or linen table cloth. Add matching napkins.
Use tea leaves rather than teabags, if possible, and provide a tea strainer. Set out the essentials. As well as milk and sugar, provide a small dish of thinly sliced lemons.
Provide two teapots. One teapot should contain the actual tea. The other one should be filled with hot water.
Serve dainty finger sandwiches, and scones with clotted cream and home made jam, delicate sweet golden crumbly biscuits, mouthwatering slices of buttery, freshly baked cakes and other fancies such as meringues and fruit - filled tartlets..
Have a three-tiered cake stand with sandwiches on the bottom tier, freshly baked scones on the middle tier and a selection of fruitcake and fairy/cream cakes on the top tier. Set out the condiments. Put jam, honey, clotted cream and butter into small individual pots or dishes.
All these delicious treats create the quintessential English teatime experience.

TVI AND FRENCH INVASION SENDS COASTAL TOWN BARMY
A strong odour of rotten eggs has wafted across the Channel as the result of a chemicals factory gas leak in France, prompting a flood of panicked calls to the National Grid from the south east.
The National Grid emergency team said it had already received more than 60,000 phone calls by 10am this morning - more than seven times the normal number of emergency calls, and mainly from people in Kent and Sussex.
The leak occurred in the early hours of the morning near Rouen, north west of Paris, but the wind blew the pong south, leading to a slew of phone calls to the emergency services in Paris.
Meanwhile migraines, irritations and nausea among the residents of Rouen have been widely reported by the local press as the company works to plug the leak.
A French Cup football match between Rouen and Olympique Marseille had to be postponed because of the stink, the French federation said.
Blustery conditions have blown the gas across to the UK, with Channel 4 News Twitter followers reporting that the whiff had spread across the south east to Worthing, Brighton, Hastings, Sussex, Eastbourne and Portsmouth.
However, officials at the Lubrizol factory near Rouen, which makes additives for industrial lubricants and paint, insist that the sulphur-like smell is harmless.
It is smelly but not dangerous.National Grid
The company said the smell of rotten eggs comes from a harmless additive in natural gas that was non-toxic.
A spokesman for National Grid confirmed this to Channel 4 News: "We've had lots of calls from people concerned there is a gas leak. It is from France and we are keeping a close eye on it - it is smelly but not dangerous. People shouldn't be concerned about the health impacts."
Pierre-Jean Payrouse, director of internal operations at Lubrizol, said the company is battling to plug the leak, but admitted it might take until tonight.
"It's not so much a leak as a product that has decomposed, which smells very bad and which is escaping," he told local reporters.
Paris police said in a statement the gas was Mercaptan, which is non-toxic but is flammable in strong concentrations.

TVI AND THE TRUTH ABOUT LAST YEAR
The past year has been an exceptional one in the city for
many people no doubt. Credit to Brighton and Hove for keeping its head in 2012 when
so many lost the keys to their own front doors. Businesses folded and some lucky
ones only changed hands. Absolute has begun a change after being taken up by
Pinnacle Publishing. The new guard has toasted the continuation of this
magazine with the Christmas bumper edition and the festive PR party in December
at Havana Spoon. I got to meet the new faces behind the fortunes of the
magazine and catch-up with some of the city’s now established event makers and
business shakers like Brighton Fashion Week’s Liz Bishop full of wonderful news
of this year’s design showcase and Pieter Grobbolar of the luxurious Concordia
Dental.
In conversation with Absolute’s new MD Alan Prior and its
editor Ian Trevett I found out that this column is much talked about and widely
considered as ‘interesting’ across a wide section of Brighton. Readers either
enjoy or dislike it with the main criticism being that it is ‘all about me’.
Well, it is PJ’s Socialite Diary. It is about me, my take on the city and what
people, events or businesses come to view on my radar. Write about what you
know as they say. So PJ’s Socialite Diary will rarely be about quantum physics.
But I can safely write a few words now about Brett Mather’s new kitchens at The
Cow on the site of the old Tin Drum in Seven Dials. Fabulous, fresh and funky.
I’ve mentioned the talents of Brett before, he who used to head up the kitchen
at the Stoneham and who still holds the keys to the cookers at Hop Poles. Brett
continues his expansion in the city with a cosmopolitan menu at The Cow that
also features a wholesome and splendid traditional Sunday roast. You can judge
a kitchen by a Sunday roast and The Cow’s kitchen with Brett at the helm is set
to shine for some time to come. Do peruse this new pasture.
Last year began with my successful legal battle with the individual
with whom I undertook a series of PR events and who quite blatantly defrauded
me and others definitely establishing a low point from which I began 2012. All
of my friends and most of my professional colleagues know of the person(s) and
the outcome and thankfully the dark deed doer has been socially obliterated and
like a cow a metaphorical bell rings from a certain neck warning the honest
among us of their approach. The year progressed with my being taken up as a
member of the Russian touring tribute band Melodies of Boney M with who I
shared many a jet, tour van, motorcade and stage, a set of experiences that
marked the past year up as truly memorable and one that I will be forever
grateful for. And now with the international release of Brighton Babylon, my
first novel of four (so far), to be published by London’s Dynasty Press Ltd., I
hang up my singing and dancing glad rags and begin 2013 brandishing a smile and
holding a pen as Brighton Babylon begins its adaptation to TV as a comedy drama
series. With David Donno and the folks at Dynasty Press I host the official
launch of the novel at Naked Eye Gallery at Farm Mews, Hove on February 17th.
The guest list closed in mid December but if you stand outside you might get a
glimpse of the city’s funset and hear just one last tune from me and Melodies
of Boney M if I can convince my tour mates to belt out Daddy Cool for you. Happy
